Spicy Wilted Spinach


This is my favorite spinach recipe. I love that the texture is firm and the flavor is bold. If you have any leftovers, use them to stuff a chicken breast or to add to an omelet. Fantastic!

This makes 2 servings (4 servings per pound of raw spinach)

Equipment

10″ nonstick pan with lid

Ingredients

• 1 T olive oil or other vegetable oil (not butter)
• 1/2 pound raw spinach
• 1 T minced garlic
• 1/4 tsp red pepper flakes

Directions

1. Heat pan on medium heat
2. Add cooking oil
3. Add garlic and stir for about 20 seconds
4. Add red pepper flakes and stir another 10 seconds
5. Reduce heat to low
6. Add spinach
7. Cover and let the spinach wilt
8. Open lid and stir
9. Serve immediately
