Jennifer’s Somewhat Famous Pepper Steak


This is a great recipe for beginners,  because it’s really foolproof! We’re using simple ingredients. We’re using one pan. We’re prepping for 15 minutes and eating a super-flavorful meal in an hour!

Make extra and freeze portions for more meals later.

This dish reheats up beautifully.

(I have not tried making this in a crockpot, but I feel like this would be crockpot friendly!)

Servings

4 (1.5 cup) portions

Equipment

10 or 12-inch everyday pan or Dutch oven with a tight lid. (This is a deep skillet- about 3 inches deep)

Ingredients

  • 1 pound round steak (or any cut of beef that is a good price)
  • 3-4 medium to large size green or mixed colors bell peppers
  • 1 medium or large yellow or white onion
  • 2 15-ounce cans of diced tomatoes with juice (or 5 or 6 diced very large tomatoes)
  • 2 T Beggs Bold Blends Burger & Steak Seasoning
  • 2 T cooking oil, such as olive oil
  • 2 T all-purpose flour

Directions

  1. If you are going to serve this over rice, now is the time to get the rice going. That said, why don’t you already have some in the freezer?
  2. Cut meat against the grain and into thin slices that are about 2-3 inches long and about 3/8 inch thick.
  3. Cut bell peppers and onions into thin strips about the same size as the meat.
  4. Put meat into the cold skillet.
  5. Sprinkle flour across the meat and stir well to coat all meat evenly with the flour.
  6. Sprinkle Beggs Bold Blends Burger & Steak Seasoning across the meat and stir to coat the meat.
  7. Pour the oil over the meat and stir to coat the meat.
  8. Add chopped bell peppers, onion, and tomatoes and stir gently to mix ingredients.
  9. Place the lid on the skillet.
  10. Turn burner up to medium heat and simmer with the lid on for about 45 minutes until meat is fork tender. Stir several times while cooking.
