about 32 cups--yes, this is a HUGE pot of soup. of course you can make half or a fourth as much- just be sure to use enough of the canned bean liquids for flavor

Equipment

10-12 quart stockpot

Ingredients

  • 3 medium onions, chopped (you can use frozen)
  • 1 heaping tablespoon minced garlic
  • One whole rotisserie chicken, picked and chopped
  • 1 cans black beans- do NOT drain
  • 2 cans white hominy- do NOT drain
  • 3 cups frozen corn
  • 1 (28-oz) can of crushed tomatoes
  • 2 15-oz cans of diced tomatoes
  • 2 cups V-8 juice
  • 3 heaping tablespoons Better-Than-Bouillon Roasted Chicken Base mixed into 6 cups warm water
  • (OR 6 cups chicken stock)
  • 4 T Beggs Bold Blends Taco Seasoning
  • 1 cup  whole fat sour cream
  • 2 cups crushed tortilla chips

 

Directions

  1. Put all ingredients in stockpot and stir to combine completely
  2. Bring to a boil, stirring occasionally
  3. Reduce heat to medium and simmer about 40 minutes, stirring occasionally
