Baked Buffalo Chicken


Here’s a simple and flavorful recipe that everyone will love. Freeze leftovers for another time or chop them up and reuse them for amazing nachos!

Cooking  Time

45 minutes or when temperature of chicken is 165F

Preparation Time

5-10 minutes

Servings

4 (2 thighs per serving)

Equipment

  • Medium mixing bowl
  • 8×8 baking pan

Ingredients

  • 8 chicken thighs (1 ½ or 2 pounds)
  • 1-3 Tablespoons Frank’s Red Hot Wings Buffalo Sauce (depending upon how spicy you like it!)
  • 1 brick of cream cheese (do not use non-fat), softened at room temperature
  • 4-8 strips of cooked bacon, crumbled or chopped into smallish bits
  • 1-3  cups shredded Mozzarella cheese (use a little or a lot!)
  • chopped green onions (optional)

Directions

  1. Preheat over to 350F
  2. Mix cream cheese with Frank’s sauce
  3. Open each chicken thigh and place about 2 Tablespoons of cream cheese mixture in the middle, close the thigh, and place it in the baking pan
  4. Sprinkle the mozzarella over all the thighs
  5. Sprinkle bacon over the top
  6. Bake, covered, in the preheated oven for about 35 minutes, then uncover and bake another 5-10 minutes or until the cheese is golden and browning slightly.  (chicken is done when it registers an internal temperature of 165 degrees F*)
  7. top with chopped green onions (optional)

 

* When using a thermometer to check the internal temperature, you want an accurate reading of the chicken, so be sure to place the probe into the thickest part of the chicken and not into the melted cheese that is inside.

TIP:  You can freeze the buffalo chicken with two sides in an entrée container and reheat for a 6-minute meal!
